Living Well Without a Full Kitchen

When I was a young mother, I fled my abusive husband and lived in a small studio apartment that didn’t even have a kitchen. I had a microwave and a hot plate, and somehow, we made it work.

Looking back, that season of my life taught me something I still carry with me today.

You don’t need a large kitchen, expensive appliances, or endless counter space to nourish yourself and your family.

Today, many people are living in studio apartments, tiny homes, senior housing, dorm rooms, RVs, or other small spaces. Others may have mobility challenges that make using a traditional kitchen difficult. I’ve experienced both.

Today, because of my mobility disability, I have created my own little kitchenette on the top floor of our townhouse. Instead of making multiple trips up and down the stairs, I brought the things I use most upstairs.

My little kitchenette consists of:

  • A refrigerator
  • A rice cooker
  • An air fryer
  • A coffee maker for hot water
  • A Magic Bullet

That’s it.

Yet I still make protein smoothies, soups, healthy meals, and simple comfort foods.

This morning I laughed because I created what I now call Tower Split Pea Soup. I didn’t have onions, celery, or broth. I had carrots, split peas, seasoning, water, and my trusty rice cooker.

So I made soup.

Health and wellness aren’t about having the perfect kitchen. They’re about making thoughtful choices with what you have available.

Sometimes we wait until life feels perfect before taking care of ourselves.

I’ve learned that caring for ourselves can begin right where we are, with whatever we have.

Healthy living doesn’t require perfection.

It requires creativity, resourcefulness, and the willingness to keep moving forward one meal at a time.
