So I did what I always do when life feels heavy… I made soup.

🧂 You’ll Need:
1 tablespoon olive oil or sesame oil
½ small onion, finely chopped
2 cloves garlic, minced
½-inch piece of fresh ginger, grated (or ½ tsp powdered)
1 carrot, sliced thin
1 stalk celery, sliced thin
3 cups chicken or vegetable broth
A small handful of rice or noodles (whatever you have)
A handful of greens (spinach, bok choy, or kale)
1 tablespoon soy sauce (or to taste)
Optional: shredded rotisserie chicken, tofu cubes, or a soft-boiled egg
Salt, pepper, and a squeeze of lemon to finish
💛 How to Bring It Together:
Start soft.
Heat the oil over medium heat and sauté your onion until translucent — slow and gentle.
Let it breathe.
Build the base.
Add garlic and ginger.
Let that aroma fill the air like therapy.
Layer the comfort.
Drop in your carrots and celery.
Stir for a minute, then pour in your broth.
Bring it to a slow simmer.
Add your heart.
Toss in rice or noodles — let them cook right in the pot. The starch thickens the broth just a touch, like a hug.
Finish with grace.
Add your greens, soy sauce, and any extras — chicken, tofu, or that soft-boiled egg.
Simmer for 3–5 minutes more.
Taste. Adjust with salt, pepper, and a little lemon.
